My friend has two Uberti Single action revolvers. One in 4 3/4 and one in 7 1/2. He really likes how the 7 1/2 shoots. How difficult/possible would it be to replace the 4 3/4 barrel with a 7 1/2?

Should be professionally done unless you really know what you are doing.
Not only is it REALLY easy to spring or distort your frame (which essentially detroys the revolver) but registering the new barrel to line up properly can be quite a trick.
You may find the cost of such a modification to be somewhat prohibitive. It may be more cost-effective to sell or trade up to a gun of the desired configuration.
The only time I seriously consider swapping out a barrel is if the original one is damaged or shot out beyond repair.
