I've seen beautiful case hardened steel Cattleman convertibles on the gun auction sites in the past but don't see them as a current offering by Uberti. The convertible comes with two interchangeable cylinders (one for 45 LC and one for 45 ACP), just like the special order Rugers for instance.

My question is when did these become available, and when did they quit offering them?

If anybody has any practical experience with this model I'd love to hear from you too!

TIA.

The case hardening varies a lot depending on the time period when Uberti made them. A 31 pocket model from about 1983 has nice color case and silver plated trigger guard and backstrap. My 2003 1851 Navy doesn't have much color at all. The loading lever on my Walker kit gun has lovely colors. For about $100 you can have one color cased by someone like Doug Turnbull.
I bought a 45acp cylinder taken off another gun and it works perfectly on my two cattlemen.
